fish!
Very well we prepare delicious sauces with "do it yourself" to combine with the taste of fish to enhance it. Let's start with the AIOLI SAUCE for which they serve:
- gr. 250 of mayonnaise
- 4 cloves of garlic from which to remove the core and finely chop
Mix the two ingredients well and this very simple sauce is ready to be enjoyed
We can also make Brandy sauce:
- extra virgin olive oil
- good Brandy
- white wine
- spices (e.g. thyme, rosemary, parsley, basil, etc.) finely chopped
- a pinch of salt
We also add wine sauce for small fish such as sardines, mackerel, anchovies and sole)
- extra virgin olive oil
- red wine
- black pepper
- finely chopped bay leaves and garlic
Filter and pour over the fish just removed from the grill.
Finally the very delicate cream sauce
- extra virgin olive oil
- tabasco
- salt
- white pepper
- finely chopped capers
- cream
Again pour over the hot fish!
