Salmoriglio sauce (in Sicilian and in Calabrian sammurigghiu) is used in the Sardinian tradition but also in the Calabrian one and is produced with:
- a lemon
- 10 gr. of parsley
- garlic cloves
- 100 ml of extra virgin olive oil
- 50 ml of warm water
- salt
- fresh hot green chilli
- abundant dried oregano
- basil
We prepare the sauce by squeezing and filtering the juice of a lemon, finely chopping the parsley with the garlic. In the meantime, put the warm water and oil in a bowl, mixing them with a whisk, add the oregano, the chopped parsley, salt to taste. and some fresh green chilli.
