Provola
Slice the provolone about 1 centimeter thick, drain the slices in a fine mesh colander and put it in the freezer for 10/15 minutes.
In the meantime, heat the grill well and ... when it is boiling, put the provola slices, turning them halfway through cooking.
As soon as we see that the provola is about to melt, serve it on the table, preferably placed on a preheated plate, adding a little bit of raw extra virgin olive oil to taste and if we want to give a touch of plus sprinkle it with chopped pistachios!
